“IThere’s no way to say no when an Indian person invites you to taste the Paan. A little bird tells me to experience that specialty made of lime, tobacco, seasonings, spices, rose jam, aniseed, coconut… It’s up to each Paan maker… but the principle is always the same: numerous ingredients are mixed together and rolled in a betel leave; the latter marinates for several hours in a non-filtered water…of course! Put the Paan between your teeth and your cheek…get all the juice that comes from it, and chew the candy for long minutes…You can then throw it away or swallow it…”
